The other day, my old roommate Sarah texted me to tell me she was needing some soup recipes. When we lived in Lawrence, Kansas, that’s all I ate! Well, that plus hummus. It was so easy to have a big pot of soup simmering on the stove, and when guests came over, they were able to eat their fill.
I looked through my collection and realized that I really only made one kind of soup: incredibly easy minestrone. Then I thought perhaps Sarah isn’t the only one who could use a little minestrone in her life, thus this recipe card:
My second favorite soup to make, and probably the tastiest, is Tamale Soup from Follow Your Heart’s Vegetarian Soup Cookbook. It’s creamy and delicious, though not very brothy!
